If you have two omelet pans and room in your microwave for both, then yes. But cooking time will need to increase. Rule of thumb is to multiply the time by 1.5. So two at once should take 3 minutes for the first cook and approx 2 minutes 25 seconds for the final cook. Remember cooking times and temp vary by wattage and what you put into the omelet. The more ingredients you add, like peppers, onions, cheese, etc., the longer it may need.

I suggest using a lower temp for longer, stopping to stir multiple times, going easier on the fillings, creating a thicker outer portion by mounding up the fillings a bit toward the outside and making sure your microwave uses a turntable.
